Mao Feng Green tea\u003cbr\u003e\n1 « Tbsp extra-virgin olive oil \u003cbr\u003e\n1 large onion, diced\u003cbr\u003e\n1 clove garlic, chopped\u003cbr\u003e\n2 cups zucchini, chopped\u003cbr\u003e\n2 cups potatoes, chopped (approx. «\" pieces)\u003cbr\u003e\n4 cups of fresh baby spinach, loosely packed\u003cbr\u003e\n¬ cup fresh parsley, chopped\u003cbr\u003e\nsalt and pepper to taste\u003cbr\u003e\u003cbr\u003e\nPreparation:\u003cbr\u003e\nHeat the water to 180§.  Remove from the heat, add the Mao Feng green tea, cover and let steep for 2 minutes. Strain the leaves and set aside.\u003cbr\u003e\u003cbr\u003e\nHeat the olive oil in a large pot over medium heat. Add the onion and garlic and saut‚ until soft. Stir in the zucchini and potatoes.  Add the brewed green tea and bring to a simmer, cooking until the potatoes are soft.\u003cbr\u003e\u003cbr\u003e\nAdd the spinach and stir until the spinach is just wilted.  Add the parsley and remove from the heat.  Puree in a blender until the soup is smooth.
